Why not give in and serve your kids foods that are unhealthified with sugar once in a while. At least they eat them versus refusing to eat them at all. That's my credo. Especially when it comes to toddlers. And don't be too harsh on me. I do go out of my way to limit the amount of unhealthy fats and syrups and artificial flavors and other non-food-sounding ingredients that most traditional easy-to-buy snacks have to offer. So I give myself the right to cheat here and there.
Avery wants nothing to do with bananas, but practically inhaled them when served in this manner. I owe this recipe to a new cookbook my husband bought me for Valentine's Day. Be expecting lots of new recipes from this one in the future: "The Whole Foods Allergy Cookbook" by Cybele Pascal.
INGREDIENTS:
- bananas
- olive oil
- cinnamon
- sugar
Cut the bananas in half and then split them down the middle with your finger. They'll break into three equivalent pieces. My dad taught me that. Hence the term banana split.
Heat a teaspoon or so of olive oil in a large frying pan over medium high heat. Add the bananas. Sprinkle 'em with a little cinnamon and sugar. Flip 'em after about a minute. Sprinkle 'em with a little more cinnamon, sugar, and love. Wait for them to cool. (You do want to check because as the original author of this recipe warns, they do get deceptively hot). Serve to your kids. And don't you dare take more than a temperature-testing bite. You're an adult. You should have the will power to eat them without the added sugar. Unless that's your dessert. Then I say it's all okay.
